Almost nothing you buy in a bag labelled “mixed nuts” is a nut. Peanuts are peas. Cashews are stone fruit. Brazil nuts are seeds rattling in a coconut-sized pot. Macadamias — hard, round, single, shelled — fail on a technicality so specific it is worth the whole page. Here are 70 so-called nuts, X-rayed and judged.

01 — The rule

Five questions. All five must be yes.

A botanical nut is a specific kind of fruit: a dry, one-seeded fruit whose own wall goes hard and stays shut. That is the entire definition — and it says nothing about being crunchy, oily, roasted or sold at cricket matches. Every impostor below fails at least one of these.

It's a whole fruit

What you crack is the entire fruit — ovary wall included — not just a seed that was sitting inside something else.

It's dry

The fruit wall is dry and woody at maturity. No flesh, no pulp, nothing juicy to wipe off.

Fails: walnut, coconut, pistachio

It stays shut

Indehiscent: the fruit never splits itself open to release the seed. It has to be broken into by an animal, or rot.

One seed inside

Exactly one seed per fruit. (Most nut ancestors start with several ovules and abort all but one.)

The wall is stony

That single dry wall is thick and hard. If it's a thin papery skin instead, you have an achene; if it's fused to the seed, a grain.

02 — How to read the diagrams

Colour tells you what a shell really is.

Every specimen is drawn in cross-section, with each layer coloured by what it is, not by what it looks like. Two shells can look identical and be completely different organs — that is the whole trick. Only a gold shell can make something a nut.

03 — The case of the macadamia

Hard shell, one kernel, and still not a nut.

The macadamia is the best possible test of the rule, because by eye it is more nut-like than a hazelnut. Here is what the cross-sections show.

Why the macadamia loses on two counts

1. Its fruit opens itself. The macadamia fruit is a follicle — a leathery green husk built from a single carpel that dries and splits along one seam to drop what's inside. A nut, by definition, is indehiscent: it never opens on its own. The moment that husk splits, the fruit is disqualified, the same way a pea pod is.

2. The famous shell isn't fruit at all. Peel the green husk away and the rock-hard brown sphere left in your hand is the seed coat — the testa, part of the seed. Botanically it is the same organ as the papery red skin on a peanut or the thin brown film on an almond; it has simply lignified to an absurd degree (macadamia shells crush at around 2,000 newtons, the hardest of any commercial crop). In a hazelnut, the hard shell is the fruit wall and the seed inside it is soft and free. In a macadamia, the fruit wall was the green thing you threw away.

So what would have to change? The green husk would need to stop splitting and instead go woody itself, hardening into the shell while the seed inside it stayed thin-skinned and loose. Then macadamia would be a nut — and the brown shell you know would have to become an unremarkable brown skin. In other words: it isn't that the macadamia lacks a hard shell. It has one shell too many, in the wrong layer.

The same logic convicts the Brazil nut (hard brown shell = seed coat, inside a woody pot that holds a dozen more) and acquits nothing. Meanwhile the coconut — sealed, single-seeded, stony-walled — misses out only because of a fibrous layer of flesh.
